I have a bit of kit left over from the previous brew weekends and not exactly the kit I needed for a particular recipe.

I was going to run a Steam Beer (Coopers) over the w'end, but I realised that I used my LDM stock on a batch of cider and my Real Ale with another recipe, plans had to be changed.

I have left over the following:
1 x can Coopers Pale Ale
1.5kg LDM
100 grams of steeped Dark Crystal Malt (now 2 litres)
Dextrose, dextrose and more dextrose....
50 grams Saaz Hops
10 grams Chinook Hops
100 grams Centenial Hops
100 grams Northern Brewer Hops
44grams coopers yeast
23grams Saflager S23 Yeast.


So...what do we recommend?

Here's what I have in my head at the mo...

Bring the Dark Crystal Malt up to 67 deg (after boiling again)
Add 1.5kg LDM
20 grams of Northern Brewer for 20 mins

Mix up the batch, pitch both sachets of S23
After Krousen, dry hop with 10 grams each of Chinook & Centenial.

What do people think?
Should I change up the hops?
 
Looks pretty good to me, although I'm yet to use Northern Brewer so I can't say much on its hop use. Based on my limited hop experience, I would go for a combo between Centennial and Chinook in the last 15 minutes of the boil and then dry hop Centennial or whichever hop you prefer.

Also I personally would probably just use 1 packet of S04 since it's not a strong beer but if they're old or need to be used, 2 packets wouldn't hurt.
 
As I've only ever tasted one steam beer and have never brewed one, I'm not going to be much help. I'm just wondering why you used light dried malt extract in a cider. Wouldn't that make it a cider/beer hybrid?
 
I only used about half a kilo.
The ldm works well with the honey. Works well with the flavour
 
Honey is nice is a Pale Ale, I try to keep it around 350 - 400g in a 23 litre brew. It adds a lovely hint of sweetness at the end of the swallow but any more than 500g can thin out the beer a bit more than I would like.

What hops did you end up going with?
 
About 20 grams of centennial and cintra each.
Did a hydro yesterday before dry hopping and the flavour wasn't too bad.
Be interesting to see how it rolls out after the hopping.
 
Centennial and citra are a sweet combo, I did a faux cerveza with a similar combo and it's a big hit with me and my friends. Good job, I think you're going to enjoy it sir.
