Looks delicious! I also recently used Bestmalz Red-X, from Germany. I used it 100% of the grain bill, and also tried it with smaller %. It gives a beautiful red color but does not taste like too much caramel flavors.

I really like this malt, but, as you say, it has a light flavour. I add 10% caramalt of the same colour to make an English-style bitter, and I use it on its own to give an OG of 1060 to make my red IPA. It really lets the hops shine through.
Using it for a pilsner, with, perhaps, a bit of Carapils, and some noble hops produces a very refreshing red lager.
But any recipe that destroys the colour is really a waste of Red-X. In my opinion.
