  • I just added 2 liters of blended mango cheeks to my wheat beer in secondary & it turned an awesome orange colour! So excited for this brew.
    I spent yesterday sweating up a storm over a stovetop partial since my urn is temporarily outta action... thank god an actual storm finally came by and broke the heat!
    Surprise, surprise... 800g of roasted pumpkin in your mash leads to a damn sticky mash!

    People down south don't seem to realise we don't have central heating here so while they're sleeping in their nicely heated houses we actually get cold.

    I'm really getting into my malty English Bitter & ESBs. What's happening to me? I'm moving away from my hoppy IPAs towards malt driven beers, god help me - I might be drinking Stouts soon...

    That's not true. There are a couple of antibiotics that interfere with alcohol metabolism, resulting in a buildup of acetaldehyde (which will make you feel like shit). If you aren't on one of those antibiotics then drink away.

    I understand that german vienna vs Aus/US vienna is kilned differently (don't quote me on that though), where-in Weyermanns can be treated like a base malt but other brands need to be treated like crystal malts
    Bottled one hefe & poured a cubed weisse straight onto the 3068 yeast cake. Holy crap; there was airlock action in under 5 minutes and 9 hours later there is already 12cm of krausen!

    I'm noticing a few types of Gladfields malts popping up here and there. What's the verdict lads? Anyone made a nice brew with any of them?

    Thumbs up here. A pro brewer I was speaking with said that the higher efficiencies were offset with a lower attenuation, but I haven't found that to be the case myself. My beers attenuated slightly higher than calculated, as they normally do.
    I'm living wild and am going to brew a 10min American Pale Ale. All 120g of mixed hops added in the last ten minutes of the boil. A great way to use the last dregs of 6 packs of hops or rank stupidity? ...we'll have to wait and see.

    Damn warm winter days! I had my brewfridge set to warming during the recent cold snap and now the weather turns warm and my fermenting beer warms up to 24'c only 2 days after pitching yeast! *facepalm*
    Off to the Southbank Regional Flavours Festival to 'Meet the Brewer' of S&W. Hoping I might see some familiar faces there...

    Traded in my $7 electric scales from Kmart for a $25 electronic jewellers scale after discovering how useless the cheap scale was at weighing anything below 50g (eg. hops).

    Even my good scales that we use for baking are terrible at the extremes of the range. It is a foible of how load cells work, they are most accurate in the middle of the working range.
    I'm rebooting my yeast-bank after the flood losses. A packet of wyeast 2565 Kolsch splt 4 ways (3 for the freezer + one straight into a starter) is the first of my fresh start.
    Had a foot of water all around and under the house over the weekend. My brewspace was flooded, the freezer with my little yeast bank + hops shorted out and then floated away. About half my brew gear was completely submerged. Ah well time to start over, bigger and better than before!
