Any chance its not too low, to use a rubber washer?

I did think of that, and it may work if I can get one fat enough as the washer would need to be about 5ml thick I reckon to keep the metal bit far enough away from the curved bottom.

HB79, make sure you use the wet area stuff, have heard of people using general purpose stuff and have it peel off on them.

Yep, thought of that. Do you know if the silicon would leech anything or if there's a high temp, food grade one that would be better to use?

In my research silicone products by their nature are food grade. Don't worry about it.

Rather than using a rubber washer or uncured silicone have you thought about using a silicone baking tray and cutting a few washers out of that, cheap and you can make loads out of one. Lots of loverly colours too :D

Just bought some silicone for this exact purpose.

You want to buy the Selley's 401 silicone. It's "casual" food grade, meaning it's not designed for long term contact (as in months), and is heat rated to a constant 230 deg C. That pretty much exceeds my requirements for a mash tun sealant :D .

The baking trays are a great, and ingenious, idea but if you don't have the clearance in the bottom of your esky, as I don't, go the silicone.
 
Was just having a look at 5mm o-ring from CB so I think I might give that a crack first being the cheapest option. Also relised those baking tray things aren't very cheap for what they are, so if the o-ring isn't suitable for my application then I think I will go the silicone.
