Ive tried the following recipe its not ready for tasting but Ive got to do a 50gal brew for friends so any improvements would be appreciated.
23 litres
3kg Golden Promise
1.5 kg Marriss Otter
.5kg Crystal
Hops
Challenger 28gr. 60 mts
Challenger 14gr 15mts
Golding 14gr 15mts
Golding 28 gr 5 mts
Tried a step mash started at 40c worked up to 65c over 90 mts then did a sparge at 70 for 30 mts
Wondering about an addition of fuggles somewhere to give it a bit extra any ideas?

Kenworthy ,

Try the wheat malt 100Gms gives a nice head .

Your step mash will not hurt , I am unsure if the Bairds Malt is Fully modified perhaps it is .

At least the Maris Otter will be more authentic .
 
I can pick up Marris Otter next time Im in the city you suggested 100gr of wheat malt for head would that be above the 173 gr thats in your recipe?Also you recomend 486.77grms of beet sugar what does that do thanks again for your help

If you are to use sugar it should only be as a flavouring adjunct and never just as source of alcohol. This therefore rules out the use of white sugar and dextrose. Small amounts of some dark sugars can add subtle flavour characteristics and are particularly good in English style beers.

Never recommend more than 500 grams in a 25 Litre batch.

If you use try Soft brown sugar in Ales and Soft Dark sugar in Dark ales it is the residual Mollasses that is supposed to offer some flavour

Can I notice the difference ? personally No , but then I dont let it spoil a good recipe . ;)

It's based on a recipe from Homebrewtalk.com



4.3 kg Pale Malt
0.5 kg Crystal Malt
0.5 kg Wheat malt
45.00 gm Northern Brewer (90 min)
15.00 gm Goldings, East Kent (15 min)
10.00 gm Goldings, East Kent (5 min)
0.45 kg Golden Syrup
0.10 kg Brown Sugar
1/2 tsp Gypsum

Mashed at 66 degC

Wanted to use Nottingham but all I had was S-04

Got 25l in fermenter at 1.063


It's about a year since I had the real thing but this doesn't taste too bad so far.

3.5kg 2-row pale malt
113g Wheat Malt
340g Crystal malt
230g Cane sugar

20g 8% Challenger 90 min boil (Bittering)

14g EK Goldings 45 min boil (flavour)
14g Challenger 45 min boil (flavour)

28g EK goldings 1 min boil (aroma)


19Litres, 5.2% ABV
OG 1.051 - 1.053
FG 1.010 - 1.012
IBU 36

Wyeast 1084 or 1028

This one looks similar to yours Pumpy
