I have started a nice Sunday morning brew session, making a Belgian Witbier when it appears that my yeast starter may not have fired. I may have to resort to using SAF 04 or 05 in this beer as I can't get any more wit yeast. My gut feel is that the 04 would make the better tasting beer. Your thoughts and ideas would be most welcome!
 
Neither will make a witbier which is heavily reliant on the yeast character so it's really up to you. If you have wort that needs yeast so you can make beer, pick one.
 
Thanks Manticle. You prompted a thought. I could no-chill the batch and leave it until I can get more yeast. I've only ever done it once before so it never came to mind! I usually immersion chill. :) :)
