Johnno, what yeast are you using? I did one of these recently using rochefort 10 yeast cloned from the bottle... powerful fermentation kept it between 20-23c left it in primary for 18days been in secondary for a bit over a week planning on bottling it on monday. Should be a nice winter warmer.

Oops. Hi Hopsta. Its the Wyeast 1762.

Been stressing so much over it I forgot to add the yeast to my recipe.

BTW, looks like a great recipe.
 
Racked the Rochefort clone to secondary yesterday.

Went from 1086 to 1018 with no problems whatsoever.

It may have gotten a bit warm as it hit 24C at its peak.

Sample may have been a bit estery. Time will tell.

Its sitting at 8C for now till it gets bottled on the weekend.

not to hijack ross's thread but is it possible to make any decent belgium styles with extracts?

The Ag setup will still be in construction for awhile yet
 
I received an email from my HBS saying that a new seasonal Belgian Ale Fresh Wort Kit has been released. Might be a good start to try one and get a feel for the flavours.
