Ok. Tomorrow I'm doing two brews in the one day. It may be a bad idea but I don't get the time to brew much these days and thought it was worth a go. My question is can I buy one pack of Wyeast, make a 2l starter today, and put one litre in each batch tomorrow? I know ultimately this will work over maybe 48+ hours, my question is, will it work in 32?

What yeast strain?

What recipes?

Id be more inclined to do a 4 litre starter and split that...

Id also have a look at the mr Malty pitching calculator as pitching the right number of cells can be essential to a healthy and clean fermentation

you should be fine. Just on a side note with yeast you can "farm" a strain and have it there ready to make a starter with, you generally need to make the starter a few days before you brew but its a good way to have yeast there ready to go when you need them. Also saves on money too.

I brew double batches (42l) but ferment in two 23l glass carboys. I do this all the time. You'll be fine, but just be sure to oxygenate the wort very well, even if that means splashing when filling the fermenters and then shaking the hell out of them for a minute or two afterward.
