Hi guys,

I'm brewing the bullshead summer saison at the moment. i think i might be in trouble. i've mashed in and my brew looks watery and isn't that sweet when i taste it. i scaled the recipe down for a smaller 23 litre BIAB batch. 3.0 kg weyermann pils, 1kg wheat malt, 0.1 weyermann acidulated. i started with 35 litres at 57c and followed the rest of the instructions? do i have to much water not enough grain or have i just stuffed it up somehow?

What does your hydrometer tell you??
 
sorry, pre boil. unsure wether to keep going? or tip it?
 
That brings it to ~1.035.

Looks like a good region for a Saison. After boil should get to around 1.040
