Crazy Eyes Witbier

Brewer's Notes

This recipe was based on research from various sources and derived form a few recipies. Overall I was happy with the beer although the dried mandarin peel used will be replaced with fresh orange/lime zest next time.
Recipe shows flaked wheat however I actually used Raw (red) wheat and 0.25kg of rice hulls were also added to the mash. I'll also note cracking raw wheat is like chewing rubber bullets.....
An infusion step mash was used with a rest 50deg for 30mins and then 65 deg for 75min
Boil time was 70min
Fermented at 21 deg.
