Ive got 4 vials of the ringwood wyeast in my fridge....im too scared to use it :blink:

Walk on the wild side Steve. It's really worth the effort in the end. :)

Here's another even weirder pic of some Ringwood yeast in a previous porter. The yeast has a penchant for clumping into little blobs. Sorta looks like somebody grobbed into your fermenter. :lol:

Excuse the confusing krausen ring. This batch was repitched onto the yeast cake.

No brewing for me over the weekend but I did bottle two batches of beer yesterday, a smoked schwarzbier and a corona. Plus racked an american wheat onto 800g or so of mixed berries and aerated and pitched yeast in an american rye wort.
 
No brewing for me either. I spent the whole weekend driving a bloody milk tanker around so everyone can have milk on their weeties tomorrow morning. I was going to brew today but can't make up my mind.
Ah well, there's allways tomorrow.
 
Finally broke my AG Cherry yesterday. New boiler and Mash Tun worked a treat. No chill method. Have to iron out a few kinks in my setup but the day went fairly smoothly.

Bloody frustrating waiting for a two ring burner to boil 28 litres of wort though.
 
After spending all Sundee fitting and testing my new ball valve manifold to my AG set up. I then made a 42ltr batch of Pilsner with it on the Monday. :)

Congrats, you will never stop ironing out the few kinks. It's part of the fun but I've lost track of how much I've spent on tinkering.;)

Hi guys,

I put down my 3rd AG on Saturday, a double batch of Pilsner. Made it to 1057, & used the no chill method. Ended up with 2 x 15L cubes & 2 x 2l flagons (for starters)! I hit temps & gravity targets all day!!! :D :chug:

On Sunday I racked my 2nd AG into a keg & 6 longnecks then added 1 cube of the pils to the Southern German Larger yeast cake & added 4l water giving me 19L @1042. A couple of hours later it was bubbling up a storm :super: :super:

Spent other time being dad & sanitising kegs, I Gotta get the supply to meet demand! Any hints?

i've got 3333 krausen squirting through the airlock and it smells awesome, i'm trying to leave it alone but i'd love a taste. thanks for the yeast suggestion guys (brauluver, dr.gonzo, etc.)
 
Had a doppelbock & an ESB lined up for the long weekend, but spent too much time & money in pubs and other places to do either. Did manage to finally bottle 2 brews though, after 3 weeks in secondary.

Sounds like the wheat beers coming along well.
I think your 3333 yeast cake would love to chew its way through a Dunkelweizenbock in the near future. ;) Mmmm, Aventinus. I could drink you all day long, if only you would let me.

Got a recipe for the Dunkelweizenbock?
 
Did my first one a few weeks ago.
53% wheat
44% Munich 1
3% chocolate
decoction mash
25 IBU hersbrucker 60min
1.075 OG
3068 wheat yeast

Got a bit cold towards the end & stopped at 1.030, so i krausened in secondary with some fresh 1056 yeast and got it down to 1.018. Would have been good to finish off with a lager yeast instead, but none on the go at the time.

Looks and tastes awsome in secondary, but no where near the maltiness i would have liked.
Next time im gonna try 50/50 wheat/munich 2.

Just had an Aventinus Wheat Eisbock. This is the stuff to keep you warm on these cold winter nights.
 
dicko,invited me up to his on monday to do an ag (my first) so many questions answered and to see it done i dont know why i did'nt get into it ages ago,had a few samples of his brews. very nice,much better than the k&k brews i have done.had a great day thanks dicko and sue. :beer:
