My Kolsch is now in the new fridge, but I've just suddenly realised that I have a batch in both of my 60L fermenters, leaving me nowhere to rack to....

Looks like this hobby is bad for collecting fridges AND fermenters.
 
Went to the Big Day Out on Friday woke up shocking on saturday,so decided to go camping.
Returned home today and still paying for it. I think ill give the BDO a miss next year.

Still got tomorrow off so was thinking of trying a lemon wheat beer,so i can drink it on the weekend. 50/50 pils and wheat with 1 addition of NB or Hallertau at 45mins. Unsure on the lemon side yet gotta keep searching for some ideas.

P.s anyone feel like unpacking the camping gear outta my ute. I couldnt be stuffed. :rolleyes: geez im getting lazy :lol:
 
HA........ i didnt tell you the story of the last time we went to the same spot....... and this is NOT a tall fishing story........ its true!

I had a few nibbles and hooked something....... you know, the end of the rod was flickering around.

I started reelin g it in and comented to my friend that it was nothing great.

Next thing i know the rod bends to its limit and line is spooling off the reel.....zzzzzzzzzzzzzzzzzzzz :)

10 minuites of fighting got it to the surface out of reach of our net in the boat. It was a flathead........ i thought it was a small shark at first. 4 foot long, 8 inches across the head...... at least!

My mate (who does a lot of fishing) started to do a dance on the spot in the tinny, turned and looked at me with wide open eyes and an unsure look and said........ ahhhhhh tone...... i think we have buckleys of getting that in the boat on light line.

I started stearing it over to the boat but it spotted the boat and the net reaching out towards it and ran again. It went for 15 seconds, spooling line off the reel again, and was gone.

My mate and i sat down in the boat quietly for a moment........ then deciced........oh well get another bait in the water.

I reeled in my line slowly and feeling a bit upset ontop of the masive adrenalin rush i was having, hands still shaking.

I lifted up my hook and there was a very dead 30cm flathead on it, hooked through the lip.

The big bastard had just had the almost legal flatty in its mouth for lunch and wasnt giving it up for anyones daughter!!!

True story.

Made two of the Old clones we talked about pre Xmas, one turned out more a reddish brown, the other a toasted malt black. Only POR used. Both lovely out of fermenter. The brown still not fully carbed (under charged with sugar to allow for the heat and planning to keep for winter drinking) but the taster I had made me salivate. The darker version only bottled last week but showing great promise. Will drink that after Easter. Both meet BJCP standards and will enter both for the experience in relevant comps. Thanks for the help. Look forward to an AHB fishing competition (from all the BS we read here, a fishing tall tales barely relevant !!)
 
Aussie Ale - Finished with Amarillo & D Saaz, I don't think so - What was wrong with cluster or POR :p

The IPA brewday didn't happen as planned, but thats the bad news. The good news is that it will be brewed this Friday with the help of my good friend, Zwickel.

He doesn't know it yet, but 500 litres of great beer will have his name on it... :p

:lol: Ive done the same thing. I lost 2 firmenters to infections that wouldnt clear so im down to 2. I have an amber ale in one and a Munich dunkel in the other. Ive had to rack the amber... which was just finished thank god, to a keg and is going through the filter right now. The .....we will call it a bright ale..... i brewed today went into this and is about to have the yeast pitched now that its dowm to 20 deg.

The problem i have is the munich dunkel needs to be racked and CC'd. But i dont have a spare firmenter.

my other problem is that i need the firmentation fridge to carb up the amber ale to drink soon but i need it to firment the bright ale. So the finished lagers are on the floor in the bar room where its coolest in the house for an extended diacetyl rest while the bright goes for its life in the feeezer. By the time thats done i should have another firmenter and be able to rack and CC.

Bloody hell........... this is stresfull, i need another beer.

If you read the story mate.....you will see i didnt even get it in the boat. But yeah..... i would have taken a photo wit hthe camera phone and put it back..... the big ones are suposed to be a bit dry to eat anyway.

Brewing today......... its mashing right now behind me. I was going to brew on Saturday but i had to go fishing with a mate in his boat instead......... so the brewing got defered to today as yesterday was spent with family.

The big one was 40cm and just under a Kg in weight. legal length is 25cm so it was a monster...... you dont catch these all the time. The other 2 were good fish at 30cm+ but the big bream makes them look like gold fish

they went down very well with a cold keolsch!

They're such good eatin too, my favourite.

They look so much better underwater though.

here are the pice of my brew today. I use a small mesh FB in my kettle and the combo of POR flowers and a few pellets formed a fantastic filter bed for break. The last few liters took a while to seep out but i got almost every drop left in the kettle.

hit my target gravity and volume at 80% efficiency so very happy.

one pic is of the break and hops left in the kettle and the other is of the wort clarity to the firmenter.

Awsone stuff. Its brew days like this that put a smile on your face

This sounds interesting. I'm regretting that I couldn't make it.
I think we all became more Belgian than Australians last Saturday and the spirit of DeDolle was well and truly channeled by all involved in regard to brewing processes and recipe formulation :eek:

Where are you brewing a 500l batch? that makes our efforts look pathetic!

Funny thing though when I fired up the NASA it coughed & spluttered a bit - sounded like it was starved.
I figured it was probably a cockroach in the tube so let it go a bit longer and waited for him to run out when it got too hot.
Next thing a fat little gecko appears looking very put out, jumps out of the air vent and disappears into the garden.

Lizard lager. :lol:

Schooey, have U thought of racking to 2 X 30 litre vessels, and adding a chelf in the fridge between them?

We managed 145.5L into Primary at an average gravity of 1.091!
 
Wow that unconventional.......... the famous aroma hop for bittering and the 15.4 %AA low cohumulone hop for aroma!

Should work well though.... sothern cross is a fantastic hop but i would swap them. But who am i kidding....... im in love with unconventional brewing.......... let us know how it turnes out Kai. Id like to know how SC goes as a late hop on its own.

Took me a while to bottle it but the beer has come out quite nicely. About 1% stronger than I intended and still quite estery but the balance is about what I intended. Bitterness is good.... i usually treat a flameout addition as a 5 minute one for bitterness calculations.
