I racked my toucan (two coopers lagers only) into a couple of 10L cubes to get it off the yeast cake it had been on for 4.5 weeks
Took a reading today, gravity hasn't dropped any but the beer has visible (and taste-able) light carbonation, more so that a reading two days ago

Never had this one before

My gravity isn't dropping and I'm getting some carb, so reluctant to bottle just yet

Any ideas?

The cube is acting as a secondary fermenter, same as a bottle. That is why it is carbonating ! Probably the beer ahs reached its final gravity. Bottle asap.
 
Did you chill the beer in the cubes? Or is it fairly cool where you are? At the tail end of fermentation CO2 will tend to go into solution in a cool beer rather than gassing off into the atmosphere. Also were the cubes sealed tight or airlocked? If tight then that would account for the bit of gas.
Bottle ASAP as FG says. A month in primary is more than enough for a toucan.

No chilling of the cubes, temp is approx 20 deg.
Cubes are sealed tight BUT i've been venting every time i go past. The carbonation was present in the fermenter with airlock also.

Question: Why is the cube acting as a secondary fermenter without the addition of any more fermentables?

I thought it had been long enough in the primary, especially given how vigorous the first 4 days of fermentation were, it just never stopped bubbling completely, so i racked, trying to do the right thing and let it come down a bit more to avoid explosions



I'll bottle this evening.

Something different pops up every time.....
