I think that would be maize beer, chewed by the women then spat into a communal bowl to ferment using their mouth yeast.

Then served at ambient temperature... yum...

Tastes like egg nog...

I drank it when I was in Peru. As Wortgames said, it's maize chewed by the local women and spat into a pot, which then ferments using natural yeasts (from their saliva I assumed?). Sounds farily average, but actually it tastes ok. Surprisingly ok...

All of my ales look like the video and I ferment about 20-22C. Slightly less when using a Scottish strain. Lagers aren't quite so active.

The secret is a healthy starter.

Then his mate nearly has to turn the can upside down to drink it...??
