If you reduce wort down to syrupy gooeyness for use in say scotch ale. Can you store the syrup in a sanitised container/ jar and use it for future brews?
 
If I'm planning on boiling later anyway could I just leave it in the pot with glad wrap over it? I guess one issue would be the goo sticking to the pot.

Overnight, maybe but there's still a risk.

Do it properly and you can rest easy and store as long as you want.
 
Yeah probably 24hrs. I'll probably have about 500ml -1l of goo so not sure I'll have a sealable container that size that is heat tollerant and food grade.
 
I often keep starter wort in a stainless pot for 2-3 days, glad and lid.
Always smell, then reboil, chill and use immediately, always ok but still need to be smart and careful.
