So I was sitting down and plugging this recipe into BeerSmith, planning my brewday tomorrow, when I realised that the grain bill looks very similar to a pale ale.
So I was thinking of making a double batch, boiling them separately, brewing the Saison with cumquats and Goldings and then hitting it with the Saison yeast when it's cooled and then boiling the other with Centennial, Citra and Summit and using US-05, hopefully giving me quite a different tasting beer than the other Saison. I've not really done split batches like this before, but this would work fine and the beers should taste significantly different from each other right?
To further differentiate the two I'd consider using some kind of sour addition to the Saison, but I've not done that before. Am I trying to do too many things at once or could this work well?
