Brewer's Notes

Single Decoction Mash
Acid Rest: Add 30L Water @ 40C, Step Temp 37C, Step Time 5min.
Protein Rest: Heat to 50C Over 10min, Step Time 20min.
Sacc Rest: Decoct 11L Mash, Heat to 70C, Rest 20min, Bring to Boil, Boil 20min, Step Temp 64C, Step Time 20min
Sacc Rest: Heat to 70C Over 10min, Step Time 20min
Mash Out: Heat to 76C Over 10min, Step Time 10min. Fly Sparge Slowley Over 1.5 hours.
Yeast was actually top cropped from a HefeWeizen.
