Brewer's Notes

medium body double infusion: 50C protein rest 30mins, 67C conversion 30mins, 75C mash out 10mins.

2L S-23 starter.

Three stage fermentation schedule, third racking is just to get it really bright if you don't filter (I do now, but didn't then), with a week at 6C for clean up and settling (not the same as CC), but makes a difference nonetheless.
