Just a follow up to this one;
Purged a keg with nitro and left about 40psi in there (don't ask me why so much), stored in fermenting fridge at 4 deg C whilst I waited for room in my keg fridge to carb with CO2.
Now this was a mistake. I am having an arsehole of a time getting the cabonation right. Seems to pour relatively flat even though increased pressure well above normal. At the moment trying to drop all gas out of the beer and start again. Hopefully will work.
Anyway, if there is a next time I will just flush out O2 with N2, depressurise and fill headspace with CO2.
