Marinated, Grilled Cacciatore (dry Italian) Sausage

Gday All

This has to be one of my favourite foods, and its so simple to make. Perfect for parties and bbqs.


Ingredients:

Cacciatore Sausages (fresh is better, when they are still soft)
Garlic (fresh)
Chilli (dried)
Olive Oil
Basil (fresh not dried)
Limes
  1. The Night before cooking, remove skin of cacciatore sausages, running them under warm water will make this easier. Slice into pieces about 8mm thick.
  2. Toss pieces in a bowl with Olive oil, fresh crushed garlic and chilli to taste, cover and put into the fridge overnight
  3. Next day when you are ready to cook get barbie or griddle pan very hot
  4. Put on the pieces of sausage, squeezing lime juice over them as they cook, they should take no more than a few minutes.
  5. Once cooked put in a bowl add more lime juice, and toss through some fresh shredded basil to taste (the lime juice will knock the fat to the bottom of the bowl
  6. Serve with some good fetta, ciabatta bread and some marinated olives.
