Lager Bottling Temperature.

Hi there, long time no posteth.

Yesterday I bottled a lager brew straight from the 12 deg fridge. I was thinking about the effects of temperature, eg. chill the stubbie in the esky, esky goes hot, put stubbie in the fridge the next day, stubbie tastes like crap.

Does bottling cold, conditioning hot, chill to drink have any effect what so ever?

I'm new to doing 'proper' lager's well, but my understanding is that you risk the brew not being fully finished.
Then if you let the bottles warm up they can over gas or explde.

To be safe, I let my lager warm up to around 19-20 deg C when I think it's done, just to be sure.
But don't let it get too hot, 20 deg C max.
 
Like Robbo said - I let my lager warm up at the end of the fermentation to around 18 degrees (to perform a diacetyl rest and make sure she is done).

I like to cold condition for 6 weeks prior to bottling, so I then rack to a secondary and pop it in the fridge at aroudn 2-3 degrees for 6 weeks. When I am ready to bottle I just sit it out the fridge for a day or two and let it come back up to temp, bottle and then let it carb up at ambient temps for a few weeks.

Then just refridgerate and consume at leisure.

I haven't had a problem with this method yet...
