I've been buying a lot of spicy chutney/relish/jams lately for adding to toasted sandwiches, bread rolls etc.
I was checking out the ingredient list a couple of days ago and thought, hell, I can make one of these.
So today I did.

Here is the details for a killer Caramelised Onion Beer Chilli Chutney
Makes approx 3 x 400gr jars.

3 Cups of Malty beer (I used a blend of my Marzen and Dubbel)
3 Onions (2 the size of a standard 250ml cup and one 1/2 the size of a 250ml cup)
1/8 cup of butter.

Combine the beer and butter into a high sided fry pan and bring to a low heat.

Chop onions and add to fry pan. Simmer to cook the onions and start a reduction.
When onions are translucent add:

~0.375 cups Cider Vinegar
1/4 cup Lemon Juice
1/8 cup Balsamic Vinegar
0.75 tsp mustard (dijon)
1/2 tsp smoked salt
~0.375 tsp white pepper
1/4 tsp ground ginger
1/8 tsp ground cloves
3 cups brown raw sugar
12 chllis (6 sweet and 6 hot) seeds and all (chopped) Mine are from my garden
1/2 tsp Liquid smoke

Boil and reduce (about 15 mins) until the liquid portion is quite vicious.

Add in Jamsetta/Pectin and boil for 2-3 mins.
Let sit for 3-4 mins.
Add to sterilised jars.

And it is better than the craft versions I've bought, and has a better kick.
Absolutely addictive.

Bought some Wholemeal Spelt (Sourdough) yesterday.
A couple of thick slices with the Caramelised Onion Beer Chilli Chutney on top plus some ring burner salami/sausage chased by the first pour of my Baltic Porter.
Awesome. Lips are on fire but in a good way.

book marked! Sounds like it would go great on burgers (made with homemade patties of course) a good brew :icon_drool2:
