So i brewed a coopers recipe of the month well sort of i modified it slightly changing hops and caramunich for crystal and it turned out terrible.

It should have been a amber but its more like a triple hopped dark almost black beer.
IBU rating close to 290
EBC close to 100

http://store.coopers.com.au/recipes/index/view/id/120/

this was the base recipe
23liter in to fermenter
1.7 coopers real ale
1.5 thomas coopers amber ale
.250g crystal
25g cascade 10min boil
25g cascade dry hop

Any thoughts on what the issue may have been?

Hi sittingaround,

Am yet to make the Das Alto brew.

You list above TC Amber Ale can - but the recipe asks for TC Amber Malt extract. These are 2 different products - the malt extract is unhoped, whereas the TC Amber Ale is hopped and would be darker as well.

Otherwise maybe one of the TC cans was wrongly labelled? Or the crystal was dark variety not light? But I have my money on the amber ale vs amber malt being the culprit.

Cheers,

Pete

Ahh i listed the wrong one. It was the tc amber extract can 1.5kg. The only thing i can think of is the tral ale can was labled wrongly.

Where'd you get those numbers from?

Yeah the figures don't look quite right. When I run the recipe on Ian's spreadsheet they come out at (and I used Light Crystal 60) :

EBC = 25.8

ABV = 4.7%

IBU = 38.1

If you used Dark Crystal Malt the EBC would still only come out at 33.9.

Cheers,

those numbers came from beersmith i dragged the slider over so a color close to what it looks like in the glass and thats what it came out as. I have both the coopers can from the plug in and also from this site. I will open a bottle and post a pic of the color.

Liquid malt extract tends to go darker with age, I find most coopers kits are darker than they should be because they are around a year old, (e: real ale is not a big seller imo so might be even older) and their malt extract would probably be even darker as even less people buy them. Also crystal comes in 10l-120l (what did you use? Was that mis-labled).
Anyway, that explains the colour, the flavour might be technique on your end.

E: as far as colour on a coopers real ale kit, I'll probably come back soon and report whether I get the same problem with my older kit. Planning on a real ale kit, DLME, crystal malt NB hops and s23 yeast to see if I can get something like a cali common type beer
