Cider Stalled?

G'day mates,

Ive been fermenting Franko's all juice cider recipe, slightly modified and it has been sitting at 1006 for a bit over a week.

Recipe was

18 ltrs of apple juice
3 ltrs of apple/pear juice
1 ltr of pear juice
250 grms of light dried malt extract
200 grms of lactose
wyeast cider

Im sort of expecting it to ferment down to around 1000 give or take. I only bottle so im a bit worried about bottle bombs. Never had any to date, dont want to start now!

Any thoughts?
 
The lactose and the malt extract will probably keep it from hitting 1000.

Try a fast ferment test to see where it should get to. If it's lower than 1006 by a reasonable margin, give it more time and try rousing it.
 
I use Frankos recipe and it ferments out to 1006-1007 for me and I have used various yeasts.

I reckon she is done.
