Just ground some popping corn in my coffee grinder, works great. Can i just add the crushed corn to the mash, or does it need to be gelatinised??

If not, i'll just grab some instant polenta, but i have 750g of popping corn just sitting here doing nothin

I think you'll want to pop it first.

The starches need to be gelatinised first and popping will do this. Obviously, you want to dry-pop the kernels rather than using oil.

I have done this with good results although I expect the flavour would be slightly different if you used flaked corn or polenta. Just be aware that once the corn is popped it takes up a huge amount of space. It dissolves pretty quickly so I add it to my water first, let it break down for a minute and then add the other grains.
