Gday everyone,

Got some T-58 yeast in the fridge, and thought i should get around to using it some time.

Anyone got any decent extract recipe's for it? steeping grains or even a small mini-mash doesnt bother me at all, just want a decent recipe. expecting something belgian in nature. dark or pale, doesnt bother me at all, love it all :p

ive heard its an alright yeast for a leffe blonde-ish type of brew, which would be great.

as far as ingredients go, basics like pale, dark and wheat extract i can get locally, already have a heap of carapils, heaps of hops that are well out of style (cascade, chinook, pacific gem, amarillo, nelson sauvin and D-saaz).

try and keep ingredients limited to what i can get from craftbrewer.

I really like BConnery's Chrismoose Ale. really use the higher temp to let the T58 do its work and impart some character. I had ration my drinking of it from the start cause i liked it that much.

When you say "hops that are well out of style", well out of style with what? Or who?
I would have thought they were well in style?

Sorry- you probably meant well out of style with what you want to make with T-58.
I made a Belgiun extract with T58 using Hallertau and Saaz a while back. It came out ok but nothing to write home about. Got 7.8% abv.

My Chrismoose Ale is a good one for this yeast. It does get a little overpowered by the spices though, at least at the level I used them...
Here's a couple of recipes I think would work ok.
I entered these into beersmith after I had done them so I think the measurements in terms of OG etc might not be 100%. They were both nice beers though.

The brown sugar in the second was actually sticks of light rock sugar of some sort from the Asian supermarket.

Now, if you can get them sour oranges, Seville, are the key to this one. I think the beer would be nice without them, but possibly not.
I still consider this to be the best beer I have made, AG or otherwise.
It takes some effort but it is worth it.
3kg LME
30g Chocolate Malt
70g Crystal
100g Carapils.
100g Dark Brown Sugar.
50g Styrian Goldings.
Zest of 5 sour oranges, juice of 7.
T58 yeast

Steep chocolate, crystal and carapils.
Slightly caramelize sugar with zest of 2 oranges and juice of 1.
Boil all wort for 6 hours. Yes that's right. 6 hours.
30g Goldings @45. juice & rind for 15. 20g Goldings @0

Ferment at 20C or a little higher.

bconnery... what are Smaragd and Saphir hops? never heard of them before. anything to compare them too?

how do you think t-58 would go with a few kilos of light malt, couple hundred grams of carapils, and plenty of styrian goldings? been looking forward to trying these hops for a long time now, give me a great excuse to order some :p

i notice bconnery that you said to use them with some chocolate malt and dark sugar. do you think this would work as well as a blonde/pale style beer, or would you recommend going darker?
 
OM39A, I used it in a Golden Strong Ale last year. It was a partial based on the Big Brew Day recipe.
1.5kg Morgans Extra Pale Malt
2kg Pilsner Malt
1kg Wheat Malt
85g Melanoidin
0.3kg Palm Sugar @ 30min
0.6kg White Sugar @ 10min
40g Goldings @ 60min
40g Saaz @ 5min

Made this one up to 18 litres
OG 1074
FG 1018

It took about 6 months to really mellow out, and I still have a few bottles of it tucked away for this Christmas.

Good luck with the recipe searching.
 
anyone got anything else to add?

will be doing a craftbrewer order soon, so trying to get together all the things i want to order at once.
