Really need a heat belt ideally tonight if possible. Not able to get to any home brew shops during the day and they're shut when I leave work. Happy to come and pick it up from central-ish Sydney!

Why would you need a heat belt this time of year? Keeping bluetongues in the bathroom?

Wort temperature was 16c this morning at 8am when I went to check on it (fridge is outside in the garage), and I bet it was colder than that at 3 in the morning! I want stability and for it to stay at 18c!

If your other deals fall through I can send you one that's been hanging around for two years. I got it free off an AHB member originally so it's yours for the postage, or anyone interested for next Winter.

I originally got it when I moved to Old Bar, then found out that even though I'd gone South I was still in the Sub Tropics and now I'm definitely up in the Sub Tropics here at Kyogle.

ed: Sydney can be bloody weird. A couple of times we've been down there for New Years and wearing coats during the evening, then next day swimming at Curl Curl at 38 degrees.

And quite off topic but I've been down there in the middle of August, packing masses of warm clothes, then had to go to Broadway to buy T Shirts and shorts.

Buy a new thermometer, not a heat belt welly.......you will fry the wort mate.

Not sure how a thermometer is going to keep the wort at 18c if it's 10c (or under) outside of the fridge.
 
I think what AJS is saying is that your thermometer is lying to you.

My concern was stability of the fermentation. As I understood it, fluctuations in temperate can have adverse affects. If it's alright to let it sit between 15 and 18c then I'm fine with that! One less thing to buy (or one less hour and a half bus ride up to the hills!).
 
I would rather leave it as is. By the time you get a belt organised it wont make any difference.

Better to ferment cooler in my book

Fermentation generates heat and a decent liquid volume (like 20 L) will hold temperature well.
I also prefer to ferment on the cooler side of the yeast's working ability for most beers.

I think 16 will be fine, yeast and beer dependent.
 
I just looked at the weather forecast for Sydney. For the next 7 days the lowest temperature is 19 degrees, the maximum will be 27, but mainly 23-24 for most days. The brewing Gods are smiling on you, welly. As John Palmer said, relax, don't worry, have a homebrew. Enjoy!!
