I am tweaking my Black IPA.
We tasted version 5 on Friday. I am really quite happy with where it is at. Head retention, mouthfeel, flavour and balance all good.
What I want is more hop aroma and flavour, predominantly orange/ citrus
Currently levels for aroma (hopstand 30 minutes at 82C) and dry hop are at 5g/L.
I am using Australian Kveik Rivenes, fermented 39C. Dropped slowly post ferment to 16, dry hop 3 days. Start gradual cold crash after 1 day.
I layer with Co2 at dry hop. And at racking and bottling. Bottle condition at 2.6 Co2.
Do I need to increase hop aroma and dry hops amounts so it can compete with the dark malts?
