My current batch was supposed to be an extract witbier. The recipe I found asked me to steep flaked oats and flaked wheat.
After around a week in the fermenter I noticed there was a lot of material at the bottom of the fv. Around 2L for a 15L batch. My hydrometer samples are now a lot clearer than my OG sample and earlier samples.
It seems to me as though the suspended wheaty/oaty goodness has dropped out, so it won’t have that silky mouthfeel. There should be about 30% wheat malt in there from the wheat malt extract I used.
Has anybody come across this problem before? Do people think I should try to mix the wheat/oat back in? I assume it would settle out in the bottles again. I’m worried it is going to be very bland so my other thought is to dryhop it and turn it into a pale ale (just used US-05 as I’m not a fan of the traditional banana/clove character.)
