When To Rack To Secondary

Hi Guys

Had a pilsner bubbling away in the friday for 2 week I was going to rack it to the secondary tomorrow but when i checked to night it is still bubbling away am I better to rack it off Now or should i wait and give it a bit longer. It's sitting at about 10 deg for 10 days and brought it to 14 deg at the moment. Will taking it of to early give it Diacetyl flavoring

Let is sit for 36-48 hours at 18 deg C - this will be your "diacetyl rest". Then rack your beer. Bear in mind some malts and some yeasts are more prone to producing diacetyl than others.

"Bubbling away" is not as useful as taking a gravity reading. A gravity readin will telll you if your fermentation is said and done.

If you raise the temperature of your brew, some of the CO2 that was dissolved at 10deg will come out, causing the airlock to bubble slightly - it can make you think that ferment is still going strong. Check with a hydrometer/refract reading.
