I was about to do a toucan stout with Morgan's dockside, it has been suggested a double can stout can turn out overhopped. However I was thinking of adding 300g of chocolate malt, 100 black, 100 of caramels. With my usual 15ml of licorice extract for head stability. I want a good abv, opening the first bottle after say 8-9 months. How do you think this will work. On a single can I make it to 18l, what would the ideal volume for something like this?
