G'day fellas, been a while, anyways been mulling a stout/porter/milk stout around the old noggin for a while. Just wondering what would be a sweeter stout recipe from a kit and bits and what would be a good hop choice?

You could do up a can of Coopers Premium stout with some stout enhancer, probably some lactose and golden syrup too.
Also chuck in a packet of cocoa.
Ek Goldings and Fuggles for hops.
 
For the best sweet stout flavour(or any kit+bit stout for that matter), you need to get it from some grains. Get yourself a low colour low hopped english ale. Theres a new coopers ESB style tin around now thats supposed to be good.

Use that and steep the following:
300g of Roast barley
200g Choc Malt (i'd use carafa special II for the smoothness as it has no husk)
200g Crystal (id go for something really light as it sticks out like dogs balls toffee sweet, such as JW caramalt. the darker it is, the more btitersweet/dark toffee it is, your choice.)

Boil around 30g of EKG for 10-0mins.

Topoff with a tin of unhopped goo or a kg of DME and you are set! fill to 20L for a 4.5-4.8% beer will give you a cracker of a stout.

Add Lactose if you want a milk/sweet(er) stout, 500g and topoff to 23L for the same ABV.
 
hows this one grab ya mccraggen. 2.5kg light dry malt/ 500gms dark malt extract/110 grms wheat malt/220 grms flaked barley/220 flaked oats/250 grms med crystal/ 250grms brown malt 110 grms carapils malt/220 grms light munich malt/150 grms choc malt/125grms roasted barley/ 125 grms black patent malt/ 250grms lactose.....25grms nortern brewer hops---60mins/ 40 grms northern brewer hops for the last 30mins// total boil 60mins. yeast ==safale us04 english ale.
 
Wow mickey, 9 types of grain! You think there is enough enzymes there to convert the flaked barley, oats with that small amount of munich? btw OP'er. you will have todo so an extended steep/minimash for around 30mins - hour @ 60-70 deg to get full conversion on some of those malts or you will be pushing some starch across to your beer. I think you might need around 1kg of base malt subbed into that to get the conversion going... your call mickey!

ya good call upit to 1kg/ got to give it to ya four star a brewer that knows hes stuff.mini mash for 1 hour. this is a great beer done right.
