Brewer's Notes
This is one of the nicest beers i have brewed. Simple and great to drink. Its malty from the yeast (WLP833), light and refreshing from the corn. Its sweet from the corn but bitter from the hops. The Saphire hops are great in a bitter beer, they are so crisp and smooth. Its so well ballanced. Great summer beer! 52 deg protein rest and infuse to mash at 65 deg, ferment at 10 deg for 3 weeks, 2 days at 16 then CC for 2 or 3 weeks. I filtered it cold and its as clear as a schooner from the pub. 1.050, 38 IBU. 90 min hops were FWH.
