Pitching Yeast

I have just prepared a Blackrock Whispering Wheat brew but when it came time to pitch the yeast the temp was about 30 deg. I tried to cool it down by putting the kit in cold water but I couldn't get it down. I remember reading somewhere that it is better to pitch the yeast in this situation because the longer you leave it without the lid on the more chance of contamination.

My question is, have I ruined the batch by pitching the yeast at this temp?

The closet where I store it is about 22 degrees which is ideal so will the fermentation kick in when the wort cools?
 
Yeast works very well at 30C - no chance of you killing the yeast.
As long as the temp gets pulled down to sub 25C before the yeast really kicks off, you will be fine.

If the temp does stay high during fermentation - you will get off fruity and possibly solvent-like flavours.
 
It might just taste a bit fruity i am afraid, expect banana and i have have even had a ale taste like spc two fruit at this temp. Some more experienced brewers then me might be able to offer some more constructive advice
 
I went to a brewday at beer belly's house the other day. He had his wort at around 30 degrees and refrigerates it to about 18-20 degrees overnight, then pitches in the morning. If the container is air tight, nothing can get in. When the yeast starts, it builds a cushion of CO2 on top of the brew.
 
Im afraid the taste may suffer if you cant get the temp down quickly, would suggest placing it in the bath with some cold water and a few bags of ice, (if you dont have the fridge option.. and it sounds like you dont)... should be able to bring it down overnight.. Ive had the loss of a brew from heat and feel your worry. Hope this helps

It is currently at 28 degrees so if it hasn't come down to 24 by bedtime, I think I will put it in the laundry trough with some ice.

dont stress, its not ideal and no one will advise doing that way, but if i had a dollar for every brew i pitched at 30deg...well u know. i just pitched a fwk stout at 30 and i know it'll be ok cos of past history. yea there might be some very slight different flavours but u wont lose it altogether, but if ur like me and brew dif beers all the time it'll be hard to compare it to another :icon_cheers: . dont woory, u will still drink it and prepare an attack plan for next brew

I will see how it goes. I live in Perth and brewing isn't really a summer sport.
They reckon this brew is a Hoegaarden recipe so if I can get close to that I will be stoked.

yeah, bris much the same, got a ferment frig on the way in the next few days, cant wait. like i said it will make the beer better, but if pitched at 30deg and u cant drink it i'll giv u ur money back (not really :beerbang: )

I have had bad experiences with fermenting to hot, I cant say if pitching when hot will make a difference (i think it may slightly) but if you can maintain 18-20 deg once fermentation starts then it should be ok. only this I have read (no experience) is that try to have your yeast close to the wort temp if its to far out your yeast can be shocked so I try to have the yeast same temp as the wort well close. Not sure how true this is and what effect it has but have read it somewhere.

brewing fridges is a good idea I got 2 now first was free, will do ales ok (takes to long to cool to lager, about 50 hours) second was $40 and will fit 2 cubes and do lagers and CC lol :p

Ferment fridges are the shit! I just bottled my first controlled fermentation temp beer today... I know its gonna be the best I've ever done!
