Slices of eggplant, a good dose of olive oil then cover them in almost any combination of herbs and spices.
I like lemon pepper, fresh herbs, and particularly morrocan rub / spice combinations.
Or even just good old fresh cracked sea salt and black pepper.
I tend to just look in the cupboards and see what looks good for that week or needs to be used.

I actually do this with some veges every week. Pumpkin, Capscium, eggplant, zucchini, sweet potato of various types.
On the BBQ or in the oven then used for salads the rest of the week.

My go to for when my vegan friends come for a BBQ too.

Otherwise stuffed mushrooms with feta, herbs and red onion. Drizzle with a little white wine wrap in foil and steam on the bbq.

Haloumi as mentioned is awesome.
 
This is a lazy day favourite.

Gnocchi with spinach and gorgonzola (or Bavarian blue cheese etc...).

Simply:

1) cook the gnocchi as normal.
2) sautee very lightly some chopped spinach in some butter. Add a little milk and gorgonzola/blue cheese.
3) plate the gnocchi and serve the spinach and gorgonzola sauce on it.

Cook the gorgonzola for the minimum time you can. The stuff we get in oz is already quite weak compared to real unpasteurized stuff.
I strain the gnocchi into the sauce rather than sauce onto the gnocchi, as per preference.

Can garnish with some spring onions for some extra flavour.
