Am looking for something around 4% with heaps of mouthfeel and smack in the face hops. Do people think i'll get away with this?

I will No Chill, so 20min hops added 5min before end, 5min will be cube hopped.

Dry hops in 2 stages, 1st on day 5, 2nd on day 10 just before cold crashing.

Use 6 g gypsum, and 3 g of CaCl2. I would also just make a hoppy pale ale and bitter to max 40 IBUs keeping all the late hopping. The beer is going to be too thin without enough residual sweetness to carry 75 IBUs without tasting unbalanced. If you want a low alcohol beer with loads of bitterness and loads of hops, mash warmer than 68C.

So true. I have brewed a heap of IPAs that should have been almost undrinkable if I had listened to everyone but they have been some of the best beers I have ever made. I know what I like and I like them pretty hoppy. That's more hops than I have used in a 4% abv beer but so what. Let us know how it works out.
 
I'd back off on the hops and.........what are you looking for the oats to add?
 
Hmm, something to think about.

Done a bit more reading on what rye brings to the table, and will drop it.

I was thinking Oats would add some extra 'body', don't want a watery taste with that amount of hops....
The follow up tasting notes mention oats would have been beneficial.

have put the vienna / golden promise to 2kg each,

Will up mash temps to 69/70, and drop the hops back only slightly, 15g of each 5min before end boil, and 40g of each cube hop.

With decreased efficiency, I don't plan on sparging too much, I'm at SG1040, FG1010, IBU 57, still high, but i'm comfortable with that.

we'll see, worst case, i pour it away, but might be wiser.....!
