Sorry folks, try as I may I couldn't find much info on CC. All I found was that people do it and why.

What I want to know about it is: How to do it? What gear do you use? What are the Hazards and Pitfalls? What to be careful of? etc.

It's a common practice when making lagers.

It's very easy, syphon or drain your wort into a suitable container (try a 20L cube) that has been appropriately sanitised (important). Try and minimise your headspace (air pocket). No airlock or any gas escape needed. I throw it in my brewing fridge set on low which settles it down to 2-3C. Leave it a month or more.

Search the forums, there is loads of discussion. In summary it will allow the yeast to settle out and produce a clear, crisp beer... but infection is a risk.
