OK! I need to brew and i need alittle inspiration.

Mainly in the past I have been brewing a bitter lagers using Northern Brewers & Hallertau or Aus Cluster and POR. Sometimes I use a Coopers larger Can with 500g DLME and ~700g Dextrose. Other times I use Coopers Larger with Extract or just extract. Also some Pilsners.

Following is a list of available ingredients ;

Extract
1.7kg x Coopers Lager
2 x 1.7 kg x LME (Liquid)
1 x 500g LME (Liquid)
1kg Dextrose.

Grain
Crystal Malt
Chocolate Malt

Hops
2 x Plugs of German Hallertau (14 g ea)
65 g Hallertau pellets.
1 x Plug of Czech Saaz (14 g)
25 g Saaz Pellets
25 g Mt Hood Pellets
40 g POR pellets

Yeast
Safale US - 56
Saflager S-23
Sachets of Coopers Brewing yeast.

Various additives ; Maltodextrose, Irish Moss, Citric Acid, DAP

Any inspiration is welcome.

Been a while since I did an extract brew, but given your ingredients I'd brew a really tasty, simple pale ale with all the hops moved to the end of the boil:

19L batch
OG 1.043
FG 1.012
ABV 4.0%

1x1.7kg LME
1x500g LME
150g Crystal steeped @ 65 degrees (say 30 mins)

All of your Hallertauer @ 15 mins (contributes 18 IBUs)
25g Saaz pellets @ 2 mins (contributes 1 IBU)
Add your Sazz plug at flameout.

Use the US56 yeast.

Use some dextrose if you really want the extra AVB. Maybe grab some more noble hops and dry hop with 30gm for 7 days if you want some extra nose.
 
or a yummy porter ?

Hi Charlie and Insight.

I had already brewed by the time these posts hit the screen, however, I am interested to try both the suggestions on a later brew.

Charlie, Can you outline a porter Recipe as I have never done a porter.

Insight, I ended up going along your lines although I was a bit more conservative on hops in an effort to strech my budget.

I imagine the recipe you suggested would be pretty tasty though and would probably have given it a go had I seen it before I brewed.

If this version is not as tasty and hoppy as I would like i will up the quantities on my next brew.

This is what I brewed....am at a loss for a an type or style;

"Gone Bush Gone" (Ale? Lager?)

1 x Can Coopers Lager
1 x Can LME
500g Dextrose
100g Maltodextrose.
100g Crystal Malt (Steeped 65oC x 30 Mins in Thermos).

10g Pride of Ringwood Pellets @ 50 Mins
25g Hallertau Pellets @50 Mins

10g Mt Hood @ 20Mins (Flame out)
14g German Hallertau Plug @ 20 Mins

Safale US-56

23 litres
OG - 1048

expected FG 1012
expected ABV ~5.0%

Well off the top of my head you could try :

Brown Porter
1.7kg x Coopers Lager
1 x 1.7 kg x LME (Liquid)
250g Crystal Malt (Steeped 65oC x 30 Mins)
300g Chocolate Malt (Steeped with the Crystal)

Hops
Not overly important for this style, so you could get away with none, otherwise a small amount of any of them for 15 mins

Yeast
Safale US - 56

If you were going to buy anything extra to make this, I'd get some English hop variety for the hop addition and an english style ale yeast instead.


Hmmm .... Now that I think about it, I'm not sure if chocolate malt needs to be mashed ? If if does, just add 300g of pale ale (or even pilsner) malt to the steeping ...

Thanks Charlie. I will give this a go on my next brew i reckon.

Also, Choc Malt is OK steeped, or at least thats what i did when I made my Stout.

Maybe Im wrong.
