After all the talk regarding saisons and the warm weather that we will surely arrive with this time of the year, I thought I would try my hand at two whilst I wait for my fridge setup to be built. I've got an immersion heater for each FV so keeping the temp up shouldn't be an issue. I've been drinking a lot of pale/amber ales with a lot of hops recently.

Looking to do extract, I already have the following on hand/post

2x Coopers Liquid Amber Malt 1.5kg
2x Coopers Liquid Wheat Malt 1.5kg
4x Coopers Liquid Light Malt 1.5kg
3kg of Dextrose
500g of LDME

125g of Amarillo Pellets
125g of Mosaic Pellets
125g of Cascade Pellets
150g of Citra Pellets
50g of Galaxy Pellets

1x Belle Saison Yeast

Obviously I'll need to grab some supplies from the LHBS (LDME, yeast, etc). I was thinking of doing the first using a can of amber & light and the second using a can of wheat & light
 
Can Amber + Can Light + 500g Dex to 21 litres will be in the order of 5.8%.
Buttered to about 25 IBU with Citra - good bang for buck - then a bit of late hopping with something fruity to complement the yeast.
Not exactly to style but is something I like doing and drinking.
 
None of your hops are really to saison style, so you should feel free to bend the rules a bit. I'd be inclined to use light extract & wheat with citra & galaxy
 
I'd actually be interested to see what a 10 minute addition of Amarillo, citra and cascade will do. Probably 5-10 ibu from each. towards 10 if your gravity is higher.

2.4 g/L Saaz (3.6% Alpha) @ 60 Minutes (Boil)
0.8 g/L Saaz (3.6% Alpha) @ 30 Minutes (Boil)
0.8 g/L Saaz (3.6% Alpha) @ 0 Days (Dry Hop)


Fermented at 20°C with Danstar belle saison

for 25 litres

Notes: add 6 litres water to pot
add 1200 g dried light malt extract
add 550 g dried wheat extract
bring to boil
set timer to 60 g min
add 60 saaz
at 30 minutes
add 20 g saaz
at flame out
add
20 g saaz
1200 g dried light malt extract
cool
add Danstar Belle saison
after fementation 180 g dextrose to bulk prime

4kg pilsner 72%
1kg wheat 18%
0.2kg aromatic 3.8%
0.2kg caraaroma 3.8%
0.1kg roast barley 1.8%

10g citra @ 60
15g amarillo @ cube hop
15g cascade @ cube hop
15g citra @ cube hop

15g of each @ dry hop for 4 days

WY3711 - has munched it down to 1.004 to give 6% ABV

Will let you know how she goes.
 
So I've been busy and haven't got around to putting these brews down. Going to put one down tonight and then wait til I can get more yeast as the LHBS didn't have any.

Batch 23 litre

Boil 5 litre
50mins - 20g Citra
15mins - 15g Cascade
10mins - 10g Mosaic

Dry Hop
15g Cascade
15g Mosaic

1.5kg Light LME
1.5kg Wheat LME
200g Dextrose

Belle Saison Yeast


How do you add dextrose to Ian's spreadsheet?
 
Also, ignore the attenuation for Belle Saison on Ian's spreadsheet. My predicted FG with the formula was 1.008. I ended up with 1.000

It has a huge attenuation rate
 
Pitched my first saison yday and used belle saison. Was wondering today what the actual attenuation figure is meant to be, 80-90%?

Hey phoney, how did your red saison go??
 
Don't go with the ESB 3kg Belgian Golden Ale with Belle Saison dry yeast.....ive vomited up better tasting bile.
