All,

I have some galaxy hop flowers that I want to want to use. I also have some ella pellets I would like to use up. I was thinking of doing an IPA or Pale and using the hopback with the flowers. Would an IPA with these two hops be too over the top?

I haven't brewed many IPA's, i have a stack of pilsner malt... can I use that as the base with a bit of choc or something middle of the road to give it some colour. The malt is just supporting the hops right?

I dont know much about making recipes. I usually copy or modify a recipe I've found.

I will say tho that ella and galaxy to me would be aroma hops. Galaxy would be great in a IPA however im not sure if ella and galaxy alone will make one. I usually brew an IPA with several different types of bittering flavour aroma hops to 65 ish IBU and then dry hop 60-100g of pellets.

Ella is a great larger hop just not sure how itll fit into an IPA as i feel its not as in your face.

Basically id be looking at a pale.
You could maybe use your pilsner malt (2-row or similar? Or caramel?) Add some crystal and id like to say ella as ya bittering hops and galaxy whirlpool or dry hop after primary however i think youll get a better beer going galaxy then ella.

I could be so wrong and off the money however yeah im not really a recipe maker i just thought id be cool and comment haha
 
They are both high alpha so should be ok bittering, not sure how much of the flavour comes through from bittering hops. I have some ekg and willamette I could use for more subtle bittering in that case.

I have some US cascade to throw into the mix too but I really just wanted to get use one or two hops to see what they do
 
I'd be adding somewhere in the region of 3-5% of any crystal malt if you have some. Choc malt in an american pale ale or ipa isnt really my thing however I love about 2% in an amber ale.

I haven't used galaxy much, and definitely haven't used it for bittering but I think I read that it is not a good bittering hop. Do a search on it.

Bittering additions do definitely give some flavour. In a hoppy ale, probably not very noticeable however I just got judging score sheets back for a beer i brewed with 100% vienna malt and a 60 minute addition of hallertau hops and 1 judge said too much hop flavour for the style haha. There is also quite a hoppy aroma too it. As a side note, I found it funny because another judge commented on good malt complexity haha
 
Yeah I guess they are pretty intense flavour hops, maybe bittering with willamette might give a bit more "rounded" bitterness. Not sure

Taste is very subjective, must be tough to judge beers and can totally understand the different feedback
 
Yeah as mentioned in my first comment both would be aroma flavour hops rather bittering.
100% on a crystal addition :)
 
Hey moad,

If you can get a few things extra you will be able to explore the to hops for flavour and aroma. Firstly as mentioned, add up to 5% crystal if it's an IPA, if your going for a pale ale also include 10-15% Vienna or Munich.

For the hops, if you can't get magnum or warrior for a nice bittering charge, use the EKG. I'd use the two hops Ella and Galaxy very late in the kettle, even amounts of each at 10mins and a 10min Hopstand aft flameout plus load up on the dry hop for about 3-5 days after ferment.
 
I love throwing a little bit of dark crystal at my ipas. Gives a nice amber to copper colour and roasty malty flavour. Ella and galaxy should go well together, just use em late and dry hop as everyone else has mentioned
 
Ok will get some magnum and crystal for an IPA, will save the pale for warmer weather. I'm pretty excited to use the flowers in the hopback
 
There are commericial beers such as Stone & Wood Pacific that use Galaxy for bittering, but they are not high in IBUs like an IPA. I have used Galaxy for bittering and won't do it again.

What Galaxyj delivers in spades is delicious fruii, including to me some peach. Use it in a flavour addition at -15 to -20 minutes as well as very late for aroma.

Buth Galaxy's flavour and aroma is a bit one-dimensional. I like it alone as a late addition in blonde bales ut would definitely add one or more other hops in an IPA. Cascade should go well with it: floral, fruity in a different way than Galaxy. I don't know much about Ella as a bittering or aroma hop.
 
I love Magnum for bittering, it's basically what goes into all my recipes apart from continental lagers etc. where I only use noble hops. If you can get a hold of it, give it a go. B)

German Magnum, not US right?
 
Yes, the Magnum I currently have in the freezer is German. Not sure if I've used the US version or not, what differences are there between the two?
