Just sparging and realised the pack of Amarillo I have is actually Simcoe. Should I just sub it in?

The only other hop I have on hand at the moment is a heap of Motukea.

Should I bitter with Motukea and flavour /aroma with Simcoe or just go all Simcoe? Thoughts?
 
Simcoe is a great hop. It'll probably turn out more like an American Amber if you use it in place of Amarillo, but it should still be a cracking beer. I'd go just Simcoe
 
Sweet man. Was leaning that way. Just redid my IBU calcs so should be all good. Cheers!
 
Yep simcoe would taste awesome. Im a pretty big fan of motueka also so Id say that would have been great as well although Ive never used that as a single hop before.
 
Simcoe smelt great Danstar and a successful brew morning was had. Picked up a kilo of Motukea cheap at G&G last week so might give that a crack next time just to see how it goes. Only used it as a single hop once in a pilsner. Big fan though also
