You should be boiling the steeped grain juice. Grains have a lot of lacto bacteria that love to eat grain. They do this best when wet and can survive mash temps easily. It's possible that the taste you have is the output of the lacto bacteria. Also, without a boil, you don't get hot break forming. Always boil the steeping water with your extracts.
