I'm certainly curious for information on how you have gone about this.. Guessing the fan is undervaulted (5V? 3.3V? Pot?) to lower the spin speed.. Only other thing that put me off is the prevalence of vibrations that they seem to generate when unbalanced..

Overflowing yeast created fireworks in my lounge room and killed v1 of my Tight Arse Stir Plate, so yesterday I built v2.
All I used was an old speed controlled computer fan, old 12V adapter, bracket to mount it on, a plastic tub (looks ugly but will stop yeast-overflow) and some rare earth magnets. Everything was laying around except for the magnets and they cost only a $ or so.
If you don't have a speed controlled fan, the thread linked above has a useful/easy/cheap controller circuit you can make.
