Coopers Mex Cerveza With S-33 Yeast

Gday everyone,

Just put on a batch of brew with Brew Enhancer 2, Coopers Mex Cerveza. I don't really like using the yeast under the lid so I thought I'd give this a crack. From what I've read it's a European strain ale yeast that gives a clean finish and a quick start.

Any thoughts of which would be better suited? the Kit yeast or the S-33? I only use the kit yeast for the Coopers Mex because of consistently fine results.

Do you mean s-23? I have done this exact brew with s-23 and it came out very nice. i wasnt expecting it to come out as nice as it did because i hadn't heard great things about the kit. if you can, perhaps try and dry hop with some saaz hops or something like that

Edit: sorry i just noticed that there is a s-33 yeast.... im out.!
 
I've never used that yeast but some of my better beers have been brewed with the cerveza can. I'd suggest that pretty much any yeast will give you better results than the kit yeast.

I'd quibble with that a little bit hatchy. The wrong yeast in the wrong beer, even if it's a great yeast in the right beer, can be awful. I know it's unlikely OP is going to use 3787 in this or Roselare blend but the right yeast is worth putting in. Could put in a saflager yeast and ferment at 24 and have a horrible result.
I can't get the fermentis website to open at the moment but s33 looks like it might be a bit phenolic driven - CB recommend it for Belgians and wheats so in a clean (dare I say bland) mexican style kit, I'd say it's out of place. Definitely worth playing with it if you liked what the yeast does (having previously used it) but if you are aiming for clean tasting, low hopped refreshing beer, then I'd use either a lager yeast if you can keep the temperature right down (yeast dependent -7 -15 degrees) or safale US05 and try and stop it getting above 20 degrees (17 if you can manage it)
 
The lid yeast is probably the standard Coopers multi purpose one. I have made excellent grain based Cervezas using US-05 ale yeast which makes a reliable fake lager. My computer died a couple of months ago so I can't show you the famous picture as I lost it :rolleyes:

Good point. I've used that can with us05, galaxy & cascade & it's one of the better kit beers I've brewed.

Thanks for the comments everyone. Much appreciated. I don't know how this yeast will go but I'll hope for the best. It's sitting at 24C' and I'll bring it down to 20 over the next day or 2 to keep the esters low but the yeast level at a good range.
