Has (I would think so) anyone cast their eyes on the latest edition of BYO? Of particular interest to me is the Fullers article. The brewer states that the grist is made up of 95% base and 5% crystal. If you read the Fullers clone recipes the Pride and ESB recipes are 90% and 10% ? Would someone like to clarify if I am reading it wrong?

pretty sure the cybi clones were 95/5. the fermentation was the biggest key to succes in cloning the beers as well for memory.
 
London Pride is 95% pale and 5% medium crystal.

Interestingly, the editor for the homebrew section isn't a homebrewer?! (or, at least, just started). Did I read that incorrectly?
 
From memory these two beers are partigyle brews. ESB first runnings then the London Pride.
 
all their beers are partigyled from the same grist, barleywine, esb, london pride and chiswick bitter.
 
My copy hasnt arrived yet but whats the surprise?
Recipes for commercial beers change over time: I have several ESB recipes the oldest includes about 10% corn; another some sugar and all between 5-12% crystal
Some home brewer has used the crystal they have (remembering that there are plenty of different crystal malts) with base malt to match the target colour, if they had a paler crystal they would need more. Really most home clone recipes are just a best guess using the products available to that brewer.
I think if you do any reading on Fullers beers, you will get plenty of hints that the base malt is Halcyon another little detail many home brew recipes fail to mention. If you do a serious analysis of the yield from a parti-gyle it wouldnt surprise me at all if there was some sugar in Fullers beers, (well to tell the truth it would surprise me if there wasnt).

That all being true I still find it a bit weird that on one hand the brewer says 95% base and 5% crystal (and yes they do a partigyle) and yet the clone one page later staes 95% and 10% ???? just trying to clarify if I'm missing something in the article? :huh:

It's all in the conversion to irrational units, being American they have smaller gallons so 95% + 10% makes (90+10) or (95+5) real gallons, it's obvious if you think it through.

Seriously it's going to be down to the choice of Crystal more-lighter or less-darker, I think the guys writing the recipe will have chosen a "locally" available Crystal that when used at a
90/10 gives both the colour and the flavour they are looking for.
Remember that a brewer the size of Fullers will be writing their own malt specifications, nothing to say that the Crystal they use is even available to us or anyone else.
If you want ring Jo White they will do you a custom batch of anything you want provided you order 3 ton at a time.

If you want to clone these beers then the brewing network series of shows on it, I think there's 3 of them, are what you should be listening to.
 
From memory, the brewer interview on the Fullers Can You Brew It podcast, does confirm partigyle does happen into two coppers and then after the boil are then blended at different ratios to get each beer; Pride, ESB, ordinary bitter etc. The grist is 95% and 5% caraaroma.
