Just a general wishy washy timey wimey sort of question. Which would you consider, generally speaking, Cooper's or Morgan's extracts and kits to be better? My LHBS tends to stock Morgan's. Should I be seeking out Cooper's? I know it is a very open and debatable question but I am just after an idea.

Coopers make some good kits, probably not worth going out of your way to find though. Freshness is probably more important. Good beer is definitely possible with both.

A bad can done well can be great, the most expensive can poorly will be bloody awful. I feel the yeast is the most important component once you have your brewing techniques solid.
