Boil Chunks.. .protein?

Just bringing an AG Kolsch up to boil and noticed big whitish/grey lumps forming on the top of the kettle. I'm assuming it it break/protein but have never had it clump together so well in other batches. It would be easy to skim out. What does everyone do with theirs, skim it or leave it?

gregs and i were discussing this yesterday, he's a skimmer, i'm not, i have read/heard that it can help with head retention

I usually don't skim, but it was sitting there in big, fairly solid grey clumps the size of my hand and I couldn't resist skimming it. I've never had it to the same extent in other beers so I'm not sure what's different. Even if you do skim you'll only get about 80% of it without spending all day...

I've never bothered skimming, and have zero problems with head retention or clarity :) ass it, I say :p
