I was thinking of brewing a big amber ale something soon. Here is the recipe. It's based on a Jamil recipe for the Bear Republic Red Rocket. Its a beer I love form California.
Size: 23.93 L
Efficiency: 70%
Attenuation: 76.2%
Calories: 188.97 kcal per 12 fl oz

Original Gravity: 1.057 (1.045 - 1.060)
Terminal Gravity: 1.014 (1.010 - 1.015)
Color: 31.62 (10.00 - 17.00)
Alcohol: 5.68% (4.50% - 6.00%)
Bitterness: 56.1 (25.00 - 40.00)

Ingredients:
5.3 kg Maris Otter Pale Ale Malt
0.12 kg Amber Malt
0.47 kg Crystal 55
0.47 kg Munich TYPE I
0.085 kg Pale Chocolate
0.2 kg Crystal 100
27.0 g Magnum (14.5%) - added during boil, boiled 60 min
26.0 g Cascade (5.50%) - added during boil, boiled 10.0 min
22.0 g Centennial (10.0%) - added during boil, boiled 10.0 min
23.0 g Cascade (5.50%) - steeped after boil
23.0 g Centennial (10.0%) - steeped after boil
0.0 ea WYeast 1272 American Ale II

What do people think??? I know it is really bitter, but apparently its how it is brewed! Helps balance all the crystal malt

I did a red rocket inspired beer. Cant say i know if it matches beacuse ive never had it but i brewed a beer with its malt bill which is supposed to be pretty much spot on and converted to local malts for your convenience. ;) The hops where not the same unfortuantly. Maybe sometime soon i'll do a true 'clone'.
