    Generally, the high alcohol beers are not the best environment to culture yeast from & Generally the older the beer the harder it is to get a viable culture from it. Having said that, you can always give it a go! Jim

    I agree with Ross. Steer clear of sugar. Re-hydrate dry yeast & after about 15 min. feed it with a squirt of wort, repeat in 15 min. leave for further 15 or so min. then pitch. Jim

    I've tried the mid strength pilsner & the full strength lager. Neither were as bad as I was expecting & not bad at all for commercial beers. The midstrength seemed to be as good as you will get a commercial midstrength.

    I've used both Coopers & the S-04 in stout & they're both fine. I've also used 1056 in stout & found it to be too dry. I am using 1084 on my next few stout runs. J

    What Fermenter Do You Use?

    It certainly does &, I think, handlebar moustache man is holding up a foaming stein of beer. I had two more of these fermenters once (5l & 10l) but my brother used them to mix liquid fertilizer or insecticide during a period when I was not brewing. Cheers Jim

    FingerlickingB, That looks like an old Olinda fermenter in your top photo! I've still got one of those left over from when I did my first brew in 1975. I've had to take it out of commission due to a small crack around the tap socket. J

    TL's right it is pesonal opinion but I must say, for my taste, 1056 is too clean, dry & neutral - I prefer 1272 for an APA. J

    Advice On Porter Partial Mash

    Yes, thanks for the response. I use the r/oats because I like the resulting creamy smooth finish but I think I make stick with the Porter theme & cut back on the oats & roasted barley. I'll also ramp up the traditional ale malt & may even seek out some amber malt. J
