Hi Guys,
Thinking about trying to make a Steam Ale. Come up with a basic recipe using the spreadsheet (Light Dry Malt, Light Crystal 60 and Northern Brewer Hops), now onto considering what sort of yeast to use.
I'm conscious of the temperature being all over the place at the moment in Melbourne and have no way to cool my fermneter. So, so far all my homebrews have used ale yeasts so its not so much of an issue.
For Steam Ale I believe I should be using a lager yeast, but I know most have a temperature range of up to 22c.
Any thoughts on the type of yeast I should use?
